Spicy BBQ Three Bean Salad

Ingredients

Three beans – black, pinto and garbanzo – are folded into a smoky, tangy dressing of yogurt, BBQ sauce and lime. Each ½-cup serving delivers 1 oz eq m/ma (or ½ cup legumes) and 11 grams of protein. A great way to spice up speed scratch menus. 

Directions

  1. Place beans in refrigerator overnight.
    CCP: No bare hand contact with ready to eat food.
  2. Drain and rinse beans in a colander under running water until the liquid runs clear. Drain well of excess water.
  3. In a large bowl or container, whisk together the yogurt, BBQ sauce, lime juice, and spices until thoroughly combined.
  4. Add beans to sauce mixture, and using a spatula, fold until beans are evenly coated with the sauce.
    CCP: Hold and serve at 41° F or below.
  5. Using a #8 disher, serve 1/2 cup to each student.
