Ingredients

A traditional Indian yogurt drink reimagined for the breakfast or lunch lines. Sweet frozen mango blends with full-fat plain yogurt and whole milk, finished with a sprinkle of warm, fragrant cardamom. Each 10-oz cup brings 1 oz eq m/ma and ½ cup fruit.

Directions

  1. Day before service, thaw half of the mango overnight.

  2. Place yogurt, thawed mangoes, frozen mangoes, milk and sugar in a 5 gallon bucket.
    Blend using an immersion blender until pureed and smooth.
  3. Pour 10 fl oz smoothies into 12 fl oz cups. Sprinkle with cardamom. Serve one smoothie to each student.
